Molotes de plátano Macho From Mexico

INGREDIENTS

3-4 ripe plantains
Cheese (fresh, manchego…)
Pinch of salt
Oil

DIRECTIONS
1. Put some water to boil and add some salt.
2. Cut the plantain in medium pieces and add them to the boiling water with its rind.
3. Once the plantains are cooked drain and let them cool and dry before peel and smash them.
4. Make a puree with the plantain and do small balls (meatballs size) with it, you can put a piece of your cheese of choice inside at this moment. Wet your hands before to avoid stickiness.
5. In a fryer skillet, add the oil and start frying the plantain patties until brown.

This dish could be accompanied with sour cream, more cheese with chopped lettuce on top, some salsa, refried beans, etc. This is how we usually eat them here in Oaxaca, México!
